Ingredients

  • 1 package spanish rice & vermicelli mix
  • 1 pound hamburger
  • 2 cans (10 oz. each) enchilada sauce
  • 10 - flour tortillas, warmed
  • 4 cups cheddar cheese, shredded

How To Make beef 'n rice enchiladas

  • Step 1
    Prepare rice mix according to package directions. Cook beef and drain. Stir in Spanish rice. Add 1 1/4 cups enchilada sauce.
  • Step 2
    Spoon about 2/3 cup of beef mixture down the center of each tortilla. Top each with 1/3 cup of cheese. Roll up.
  • Step 3
    Place in ungreased 9 x 13 dish. Top with remaining sauce and cheese. Bake uncovered at 350º for 8-10 minutes or until cheese is melted.
