beef enchiladas

This recipe came from my sister-in-law, Liz. It is very simple, but always gets rave reviews when I make it.

Ingredients

  • 1 package flour tortillas
  • 1 pound ground beef
  • 1 - onion, chopped
  • 2 cans red enchilada sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 8 ounces cheddar cheese, shredded

How To Make beef enchiladas

  • Step 1
    Brown the ground beef and onion together. Drain.
  • Step 2
    Warm the enchilada sauce. (I use 1 can mild and 1 can hot)in a pan that is large enough to dip tortillas in.
  • Step 3
    Dip tortillas in enchilada sauce. Fill each tortilla with about 2 tablespoons meat mixture and 1 tablespoon shredded cheese. Roll tortilla around mixture and place in prepared pan with seam side down.
  • Step 4
    Cover bottom of a 13x9-inch baking dish with enchilada sauce.
  • Step 5
    Pour remaining sauce over enchiladas. Sprinkle with shredded cheese.
  • Step 6
    Cover dish with foil. Bake at 350 degrees for 30 minutes or until cheese is melted and enchiladas are warm through.
