It's a lot of work but worth it . It' won Two chili cook offs.

Ingredients

  • 2 to 4 tablespoons veg oil or more if needed
  • 1 pound ground beef remove oil
  • 1 pound pork sausage remove oil
  • 1 large red bell pepper chopped
  • 2 large white onions
  • 8 cloves garlic, chopped
  • 1- 7 ounces can embasa hot chipotle in adobo sause chopped fine ( 1/2 can)
  • 1/3 cup chili peper
  • 1 tablespoon dried oregano
  • 1-can 7 ounces herdez ssalsa casera mex picante hot
  • 1-can 7 ounces la victoria diced green chilies mild
  • 2 tablespoons tomatoe paste
  • 1-can 28 ounces crushed tomatoes
  • 13/4 cups low- sodium beef stock
  • 1 tablespoon sugar
  • 2-cans 15 ounces kidney beans, drained and rinsed
  • 2 - avocados sliced
  • 1 cup shredded mex cheese for topping
  • - salt & papper to taste

How To Make beef & bean chili

  • Step 1
    Heat 1/2 veg oil cook ground beef & sausage remove and drain.
  • Step 2
    Reduuce heat to med and cook onions and garlic, cook until golden brown about 6 min, add 1/3 cup chili pepper, the oregano & tomatoes with their juices, add the rest of ingredients holding back the beef stock, avocado & cheese,
  • Step 3
    Add beef stock if chili is to thick.Cook for about a hour or until tender. Place chili in bowel 1/2 way slice 1 avocado lay on chili add the rest of the chili cut the other avocado lay on top & add cheese over chili and avocado.
