Reduuce heat to med and cook onions and garlic, cook until golden brown about 6 min, add 1/3 cup chili pepper, the oregano & tomatoes with their juices, add the rest of ingredients holding back the beef stock, avocado & cheese,
Add beef stock if chili is to thick.Cook for about a hour or until tender. Place chili in bowel 1/2 way slice 1 avocado lay on chili add the rest of the chili cut the other avocado lay on top & add cheese over chili and avocado.
