bean & cheese quesadillas

I put these together tonight out of just wanting to use left overs and they turned out great.

Ingredients

  • 1 cup or can black or pinto beans, cooked
  • 1/2-1 can diced tomatoes
  • 1 tablespoon taco or chili seasoning
  • 8 ounces shredded cheese of choice
  • 8-10 - flour tortillas

How To Make bean & cheese quesadillas

  • Step 1
    Place beans, tomatoes & seasoning in food processor and process until well incorporated. (It doesn't need to be perfectly smooth)
  • Step 2
    Spoon about 1/4 cup of mixture onto one tortilla.
  • Step 3
    Cook quesadilla on a griddle until golden on each side. If desired you can spread each side with butter before cooking.
