bean & cheese quesadillas
I put these together tonight out of just wanting to use left overs and they turned out great.

Ingredients
- 1 cup or can black or pinto beans, cooked
- 1/2-1 can diced tomatoes
- 1 tablespoon taco or chili seasoning
- 8 ounces shredded cheese of choice
- 8-10 - flour tortillas
How To Make bean & cheese quesadillas

Step 1Place beans, tomatoes & seasoning in food processor and process until well incorporated. (It doesn't need to be perfectly smooth)

Step 2Spoon about 1/4 cup of mixture onto one tortilla.

Step 3Cook quesadilla on a griddle until golden on each side. If desired you can spread each side with butter before cooking.
