bbq pork burritos

Got a free tub of the shredded bbq pork and didn't know what to do with it. This recipe was on the side of the container so thought I would try it. Will let you know what my guinea pig ...ah er..my husband thinks about it. :) Update: Loves them!

Ingredients

  • 16 ounces can refried beans
  • 6 - 10 inch flour tortillas
  • 18 ounces lloyd's barbeque shredded pork
  • 3 cups shredded cheddar cheese divided
  • 1 cup la victoria thick'n chunky salasa (medium)
  • - sour cream, slice ripe olive and additional salsa if desired

How To Make bbq pork burritos

  • Step 1
    Place 1/4 cup beans in the center of each tortilla, Top each with 1/4 cup pork, then 1/4 cup cheese.
  • Step 2
    Fold one end of each tortilla up 1 inch over the filling, then fold right and left sides over folded end overlapping. Fold remaining end down. Arrange the burritos seam side down in a microwave safe dish.
  • Step 3
    Top each burrito with 1/4 cup cheese
  • Step 4
    Top each burrito with 1/4 cup salsa.
  • Step 5
    Cover loosely with plastic wrap
  • Step 6
    Microwave on high for 5 minutes, rotating the dish 1/4 turn after 3 minutes
  • Step 7
    Top with remaining ingredients
