This is an old recipe I used to make a lot. It comes from Richard Simmons Deal a Meal cookbook. We love it. Over the years I lost track of the cookbook, Finally I a couple of days ago I found it again.. I would love to share it I think you will like it too..

Ingredients

  • 1/2 medium onion chopped
  • 2 cans - 14-1/2 oz chopped tomatoes
  • 1-3 oz can - green chiles
  • 1 cup - sliced fresh mushrooms
  • 1-can - kidney beans or black beans
  • 1-tbsp - chili powder
  • 1 tsp - cumin
  • 8 - corn tortillas sliced in 1/2 inch pieces
  • 2 cups - cheddar cheese (shredded)
  • 1 cup - sour cream

How To Make baja lasagna

  • Step 1
    saute onions in a little oil for about 4 minutes Add tomatoes, chiles,mushrooms,beans , chili powder,& cumin. Simmer uncovered for about 10 minutes
  • Step 2
    Put 1/3 of tortilla strips in bottom of 7x11 pan add 1/3 of sauce, then about 1/3 of cheese (reserve some cheese for the top.) .continue to layer ending with sour cream. pour rest of sauce over that ,then add,reserved cheese. Bake at 350 for 30 minutes, let stan 10 minutes before serving.
