arroz con gandules
This is a recipe that my grandma makes for Spanish Rice. Mine is not exactly like hers, but it is pretty dang close! To include my Puerto Rican touch, I added a tad bit more ingredients.

Clairessa's Spanish rice is fantastic. This Arroz Con Gandules recipe is full of spices and Spanish flavor. We opted to add cubed ham and loved the salty flavor it added. Green pigeon peas add a contrast in texture and a layer of nutty flavor. A delicious side dish for any meal if you love warm Spanish spices.

Ingredients
- 2 slices bacon or 1/2 cup chopped ham
- 1/2 cup chopped onion
- 1/2 cup chopped green pepper
- 2 cloves garlic, minced
- 1 can Goya green pigeon peas, undrained (15 oz)
- 1 package Sazon Goya con cilantro y achiote (found in the Spanish aisle)
- 1/2 cup tomato sauce
- 3 cups water
- 2 cups rice
How To Make arroz con gandules

Step 1Heat a large skillet over medium heat. Add bacon (or ham), onions, and peppers. Cook for 3 minutes. (I have also added pimentos/olives for flavor.)

Step 2Stir in garlic and cook another 2 minutes.

Step 3Add the remaining ingredients (except rice). Bring to a boil.

Step 4Stir in rice and cover.

Step 5Reduce heat. Simmer for 20 minutes or until rice is tender. Serves 8.
