Ingredients
- 2 cups shredded 4-cheese mexican, divided
- 1/2 cup salsa
- 1/4 cup fresh cilantro, chopped
- 1 1/2 teaspoons ground cumin
- 8 - 6-inch flour tortillas
- 10 ounces enchilada sauce, canned
- - sour cream (optional)
- - tomato, chopped (optional)
- - avocado, chopped (optional)
How To Make 4-cheese enchiladas

Step 1Combine 1.5 cups of cheese, salsa, cilantro and cumin in medium bowl.

Step 2Spoon 1/4 cup mixture down center of each tortilla. Roll up; place seam-side down in greased 11 x 7-inch baking dish. Spoon enchilada sauce over enchiladas.

Step 3Cover with foil; bake in preheated 350*F oven 30 minutes or until hot.

Step 4Uncover; Sprinkle with remaining cheese. Let stand 5 minutes or until cheese is melted. Top with sour cream, chopped tomato and avocado, if desired. Refrigerated any leftovers.
