tequila lime meatloaf
This is the new meatloaf recipe. I created it based on Kinder's Tequila Lime seasoning, and it's great for sandwiches too.

Ingredients
- 1 tablespoon olive oil
- 1 tablespoon margarine
- 1 medium medium red onion, peeled and sliced
- 3 cloves garlic, minced
- 4 tablespoons tequila lime seasoning, divided
- 2 teaspoons ground black pepper
- 1 pound ground beef
- 3 large eggs, lightly beaten
- 1 packet dry onion soup mix
- 2 teaspoons lime juice
- 3/4 cup Panko bread crumbs
- 1 1/2 cups shredded Mexican cheese blend, divided
How To Make tequila lime meatloaf

Step 1Preheat oven to 350 degrees F.

Step 2Coat a 9x5-inch loaf pan with cooking spray.

Step 3Heat olive oil and margarine in a large, deep skillet over medium heat. Add sliced red onion and minced garlic. Cook and saute for 5 minutes or until crispy and tender.

Step 4Stir in 2 tablespoons of tequila lime seasoning and ground black pepper. Remove from heat.

Step 5In a large bowl, combine the ground beef, beaten eggs, dry onion soup mix, lime juice, bread crumbs, and remaining tequila lime seasoning; mix well.

Step 6Spoon 1/2 of the meat mixture into the bottom of a prepared loaf pan. Arrange the sauteed onion mixture and 1 cup shredded Mexican cheese blend on top.

Step 7Top with remaining meat mixture, patting to combine both halves. Add remaining shredded Mexican cheese blend on top.

Step 8Bake for 20 minutes or until done.
