Second, grate the onion instead of chopping it to release moisture into the meat. Third, use bits of torn bread instead of bread crumbs. Bread crumbs are dry, but fresh bread is tender which helps make a tender meatloaf. Our last tip is to add an Au Jus packet. It's like putting gravy right into the meatloaf which adds tons of flavor.   • 2 lb
    ground beef
  • 1/2 c
    grated sweet onion
  • 1 slice
    white bread, torn into small pieces
  • 2 lg
    eggs
  • 1/2 c
    whole milk
  • 1 pkg
    Au Jus gravy mix
  • 1/4 c
    ketchup
  • 1 Tbsp
    Worcestershire sauce
  • 1 Tbsp
    parsley flakes
  • 1 tsp
    garlic powder
  • 1 tsp
    salt
  • 1/4 tsp
    black pepper
  • SAUCE
  • 3/4 c
    ketchup
  • 1/4 c
    brown sugar
  • 1 Tbsp
    apple cider vinegar
  • 1/2 tsp
    garlic powder
  • 1/4 tsp
    salt
  • 1/8 tsp
    black pepper

How To Make super moist meatloaf

  • Ground beef in a bowl.

    Preheat the oven to 375 degrees. Cut the chill on the ground beef by setting it in a bowl for about 20 minutes.
  • Grating onions and tearing bread into small pieces.

    Grate the onion and break the bread into little pieces.
  • Meatloaf ingredients in a bowl.

    Put the onion and the bread pieces in the bowl with the ground beef. Add the rest of the meatloaf ingredients: eggs, milk, Au jus packet, ketchup, Worcestershire sauce, parsley flakes, garlic powder, salt, and pepper. Gently mix with your hands or a spoon until combined. Don’t overmix.

    Put the meat in a 9 x 5 loaf pan lined with a strip of parchment paper. Shape it into a loaf.

    Bake at 375 degrees for 40 minutes.

    After 40 minutes spread 1/2 of the sauce over the top of the meatloaf. Bake for another 25 to 30 minutes or until a thermometer inserted reads 160 degrees.

    After it’s cooked, remove the meatloaf from the pan by lifting the parchment paper. Top the meatloaf with the leftover sauce or serve it on the side. Let sit for 10 minutes before slicing.
