Ingredients
- 2 tablespoons olive oil
- 2 teaspoons garlic minced
- 2 1/2 pounds gound beef, 90 percent lean
- 1/3 teaspoon thyme, dried
- 1 1/4 teaspoons kosher salt
- 1/2 teaspoon pepper
- 1/4 cup beef broth
- 2 tablespoons worcestershire sauce
- 2 eggs
- 3/4 cup breadcrumbs
- 3/4 cup ketchup, divided
- 1 tablespoon parsley, dried
- 1 pound small potatoes, peeled and halved
- 1 pound carrots, peeled and cut in chunks

How To Make slow cooker meatloaf plus

Step 1Spray a 6 quart slow Cooker / crockpot with cooking spray.

Step 2Heat 1 tablespoons of the olive oil in a small pan over medium heat and add the minced garlic and cook for 30 seconds.

Step 3In a large bowl add the garlic, ground beef, thyme, salt, pepper, beef broth, Worcestershire sauce, eggs and breadcrumbs. Stir well to combine. I use my hands.

Step 4Mix the remaining olive oil and the potatoes and carrots. Season with salt and pepper.

Step 5Form the beef mixture into a loaf and place in the slow Cooker.

Step 6Slather the loaf with half of the ketchup.

Step 7Add the potatoes and carrots around the loaf.

Step 8Cover the slow Cooker and cook on low for 7 - 7.5 hours. Check to make sure vegetables are tender.

Step 9Slather the remaining ketchup over the cooked meatloaf and sprinkle with parsley. Slice and serve.
