seattle meatloaf
I created this meatloaf recipe in the style of a Seattle Hot Dog. The filling inside this meatloaf includes sauteed onions, jalapenos, and cream cheese. There's no cabbage in this recipe.

Ingredients
- 1 tablespoon avocado oil
- 1 large vidalia sweet onion, peeled and diced
- 3 - fresh jalapeno peppers, sliced
- 3 tablespoons honey mustard
- 2 pounds lean ground beef
- 3/4 cup panko bread crumbs
- 3 egg whites
- 1 packet dry onion soup mix
- 2 teaspoons crushed red pepper flakes
- 3/4 cup sweet and spicy barbecue sauce
- 16 ounces cream cheese, softened
- 8 ounces Monterey jack cheese, shredded
How To Make seattle meatloaf

Step 1Preheat oven to 350 degrees F.

Step 2Heat the olive oil in a large skillet over medium heat. Add the diced vidalia onion and sliced jalapenos and saute for 5 minutes or until tender. Remove from heat and stir in the honey mustard.

Step 3In a large bowl, combine the ground beef, bread crumbs, egg whites, dry onion soup mix, red pepper flakes and barbecue sauce; mix well until blended.

Step 4Add half the meat mixture into a 9x5-inch loaf pan. Spread the cream cheese over the meat mixture.

Step 5Add the sauteed onion-jalapeno mixture and sprinkle with shredded Monterey jack cheese. Top with remaining half of the meat mixture.

Step 6Bake in the preheated oven for 30 minutes. Let stand for 15 minutes before slicing.
