This little gem refrains from adding baked tomatoes, so it pairs equally well with Brown gravy & Mashed potatoes, or, Pasta with your favorite Marinara.

Ingredients For savory meatloaf

  • 3/4 c
    breadcrumbs (garlic & herb)
  • 1/4 c
    basil pesto
  • 1 Tbsp
    minced onion
  • 1
  • 1.2 lb
    lean (93%) ground turkey or beef

How To Make savory meatloaf

  • 1
    (In large bowl) Blend 1 Tbl minced onion & 1/4 Cup of pesto
  • Breadcrumbs with pesto, onion & egg: should create a moist crumb as shown; if too dry, add additional egg.
    Add 1 egg & breadcrumbs & mix evenly
  • When ground meat and other ingredients are combined, mixture should be moist, as shown.

If it appears dry, may add additional egg.
    Add raw ground meat (turkey or beef!) & blend well with fork or hands
  • Shown in a 1/2 sized Bundt; love this pan because it bakes so evenly. Also fine to bake in a regular bread loaf pan!
    Gently press meat mixture into well-greased pan. Bake at 375* for 30 minutes.
  • The ground turkey will be done when light blonde, any juice should run clear /should not be pink. Note, may not appear as “browned” as with ground beef.
    Turn out loaf onto serving dish, cover & rest 5-10 minutes.
