We Love these meatloaf stuffed peppers. They are quick and easy! We serve these with corn and garlic bread. Always a hit in my home.

  • 1 lb
    ground beef
  • 1/3 c
  • 4
    bell peppers
  • 1/2 c
    instant white rice
  • 4-5 dash(es)
    worcestershire sauce
  • 1 large
  • 1/2 medium
    onion, chopped
  • 1 medium
    carrots, chopped or grated
  • 1/2 tsp
    garlic salt
  • To taste
    black pepper

How to Make Quick meatloaf stuffed peppers


  1. Cut tops off bell peppers and remove seeds and membranes.
  2. In mixing bowl combine, egg, carrot, onions ketchup and seasonings.
  3. Add ground beef and rice to bowl of wet ingredients and mix with hands to combine well.
  4. Divide mixture in fourths and stuff peppers.
  5. Place stuffed peppers in microwave safe casserole dish with high sides and microwave on high 15 to 20 minutes until meat is cooked through and peppers are softened.
