We Love these meatloaf stuffed peppers. They are quick and easy! We serve these with corn and garlic bread. Always a hit in my home.

Ingredients

  • 1 pound ground beef
  • 1/3 cup ketchup
  • 4 - bell peppers
  • 1/2 cup instant white rice
  • 4-5 dashes worcestershire sauce
  • 1 large egg
  • 1/2 medium onion, chopped
  • 1 medium carrots, chopped or grated
  • 1/2 teaspoon garlic salt
  • To taste - black pepper

How To Make quick meatloaf stuffed peppers

  • Step 1
    Cut tops off bell peppers and remove seeds and membranes.
  • Step 2
    In mixing bowl combine, egg, carrot, onions ketchup and seasonings.
  • Step 3
    Add ground beef and rice to bowl of wet ingredients and mix with hands to combine well.
  • Step 4
    Divide mixture in fourths and stuff peppers.
  • Step 5
    Place stuffed peppers in microwave safe casserole dish with high sides and microwave on high 15 to 20 minutes until meat is cooked through and peppers are softened.
