Not only is this meatloaf good, it is also very pretty with the mashed potatoes lightly browned. Mom was such a fantastic cook, and not only was taste important, but also presentation.

  • 1 1/2 lb
  • 1/2 c
    bread crumbs
  • 1/4 c
    chopped onion
  • 1
    egg, well beaten
  • 1/4 c
  • 1 1/2 tsp
  • 1/2 lb
    cheddar cheese, in 1/4" pieces
  • 3/4 c
    mushroom stems and pieces, drained
  • 1/8 tsp
  • 2 c
    mashed potatoes, hot

How to Make Potato Topped Meatloaf, Mom's


  1. Combine all but potatoes in large bowl. Blend well, press into greased 9x5 loaf pan. Bake at 325 degrees for 50-60 minutes. Remove from oven, let sit in pan 5 minutes. Drain off fat. Invert meat loaf onto ovenproof platter. Spread potatoes over the top and sides of the meat. Place under broiler until delicately browned.
