Not only is this meatloaf good, it is also very pretty with the mashed potatoes lightly browned. Mom was such a fantastic cook, and not only was taste important, but also presentation.

Ingredients
- 1 1/2 pounds hamburger
- 1/2 cup bread crumbs
- 1/4 cup chopped onion
- 1 - egg, well beaten
- 1/4 cup ketchup
- 1 1/2 teaspoons salt
- 1/2 pound cheddar cheese, in 1/4" pieces
- 3/4 cup mushroom stems and pieces, drained
- 1/8 teaspoon pepper
- 2 cups mashed potatoes, hot

Step 1Combine all but potatoes in large bowl. Blend well, press into greased 9x5 loaf pan. Bake at 325 degrees for 50-60 minutes. Remove from oven, let sit in pan 5 minutes. Drain off fat. Invert meat loaf onto ovenproof platter. Spread potatoes over the top and sides of the meat. Place under broiler until delicately browned.
