Experimental meatloaf to use up an accumulation of potato chip "crumbs" from the bottom of several bags. Turned out very tasty; much different (and better!) than any other meatloaf I've eaten. My wife wanted it 2 nights in a row. I checked them after about an hour, and they weren't done. Then I got involved in a project and forgot about them. They were in the oven for 2+ hours. Do not leave them in your oven that long. They weren't burnt, but I did "rehydrate" them by drizzling water on them. LOL I didn't really measure the meat, dip, salsa, or diced onions. The measurements are an estimate.

Ingredients For potato chip meatloaf

  • 1
    beef bouillon cube
  • 1/3 c
    water
  • 1 1/2 lb
    lean ground beef
  • 2 c
    crushed potato chips
  • 1 c
    onion dip (made from a soup mix and sour cream)
  • 4 oz
    mild salsa
  • 1
    egg
  • 1/2 c
    diced sweet onion

How To Make potato chip meatloaf

    Preheat oven to 350 degrees F. Heat the water in a small bowl in your microwave oven until almost boiling. Dissolve the bouillon in it.

    Thoroughly mix all ingredients in a large bowl. Using your hands is easiest. The mixture will be very wet. I made 2 loaves in an 8x8 glass baking dish.

    Place in the oven and cook for 1.5 hours or until done.
