I've never really been a big "Meat Loaf" fan. But when my husband had requested a "Meat Loaf", I thought I would make one... The "Lady BAT" way! Not really knowing what all would go into a Meat Loaf, I just added this, and added that... I went in with the attitude: "*Hummmm, This would taste good together!" Since I didn't "measure" my ingredients (I say "Thank You, Mother" to that one... thats how she cooked), when the loaf became a MAJOR HIT!... My husband named it, "October Mystery Loaf", And asked that I make it a family favorite.

  • 1 1/2 lb
    95/5 ground beef
  • 2 c
    chopped, bacon ends excess fat removed
  • 1 can(s)
    14.5 oz diced tomatoes
  • 1 can(s)
    6oz tomato paste
  • 1 c
    cooked rice
  • 3/4 c
    diced green pepper
  • 1/2 c
    chopped onion
  • 2 clove
    chopped fresh garlic
  • 1/4 tsp
  • 2 tsp
    lawery's season salt
  • 1 c
    spicy v-8 vegetable juice
  • 1/2 c
    bread crumbs
  • 1 large
  • 1/2 tsp
  • 1 tsp
    basil, dried
  • 1
    beef bouillon, cubes
  • 1 tsp
    olive oil, extra virgin

How to Make October Mystery Loaf


  1. In a large bowl, add Ground Beef; I use 95/ 5% fat beef. Chop Bacon ends. Make sure you remove as much of the excess fat as possible. Add to ground beef.
  2. Dice green peppers, onion and fresh garlic. Add to meat mixture.
  3. In a pot, boil 2 cups of water, add 1 beef bouillon cube and one teaspoon of olive oil to boiling water. Once water is at a rolling boil, add 1 cup rice. Bring back to a boil, stir, then cover and bring heat to low. Cook for 20 minutes
  4. Add nutmeg, Lawery's Season Salt, spicy V-8, bread crumbs, egg, pepper, basil, diced tomatoes and tomato paste all to meat mixture.
  5. Once rice is cooked, add to mixture. Roll up your sleeves and with your bare "Clean" hands; mix all ingredients together.
  6. Grease a loaf pan. Place mixture in pan. Place in preheated oven, at 390 degrees. And bake for 55 minutes.
  7. Once loaf is finished baking. Let set for 10 minutes to set. I have found, because of the ingredients I used, the loaf is very moist. So do not be surprised if your Mystery Loaf "falls apart". But my husband says; "It makes not only a GREAT meal, but wonderful left overs. Taste's great cold in a sandwich!' :)
