I've never really been a big "Meat Loaf" fan. But when my husband had requested a "Meat Loaf", I thought I would make one... The "Lady BAT" way! Not really knowing what all would go into a Meat Loaf, I just added this, and added that... I went in with the attitude: "*Hummmm, This would taste good together!" Since I didn't "measure" my ingredients (I say "Thank You, Mother" to that one... thats how she cooked), when the loaf became a MAJOR HIT!... My husband named it, "October Mystery Loaf", And asked that I make it a family favorite.

How To Make october mystery loaf

  • 1
In a large bowl, add Ground Beef; I use 95/ 5% fat beef. Chop Bacon ends. Make sure you remove as much of the excess fat as possible. Add to ground beef.
  • 2
Dice green peppers, onion and fresh garlic. Add to meat mixture.
  • 3
In a pot, boil 2 cups of water, add 1 beef bouillon cube and one teaspoon of olive oil to boiling water. Once water is at a rolling boil, add 1 cup rice. Bring back to a boil, stir, then cover and bring heat to low. Cook for 20 minutes
  • 4
Add nutmeg, Lawery's Season Salt, spicy V-8, bread crumbs, egg, pepper, basil, diced tomatoes and tomato paste all to meat mixture.
  • 5
Once rice is cooked, add to mixture. Roll up your sleeves and with your bare "Clean" hands; mix all ingredients together.
  • 6
Grease a loaf pan. Place mixture in pan. Place in preheated oven, at 390 degrees. And bake for 55 minutes.
  • 7
Once loaf is finished baking. Let set for 10 minutes to set. I have found, because of the ingredients I used, the loaf is very moist. So do not be surprised if your Mystery Loaf "falls apart". But my husband says; "It makes not only a GREAT meal, but wonderful left overs. Taste's great cold in a sandwich!' :)
