my mini meatloaf
Sometimes smaller is better. This one pound meatloaf seems to work nicely for the two of us. We still end up with leftovers for another meal and a sandwich or two! Even though it's small, it's still big on flavor!

Ingredients
- 1 pound ground chuck or ground round
- 1 small onion, chopped very fine
- 2 large eggs, beaten
- 27 saltine crackers, crushed to crumbs, 18 for mixture, and 9 for topping
- 1/4 cup milk
- 1/4 cup ketchup
- salt and pepper, to taste
How To Make my mini meatloaf

Step 1Mix all the ingredients, reserving the cracker crumbs for the topping.

Step 2Place the mixture in a small glass loaf pan, and pat it into place. Top with the reserved cracker crumbs, dot with some butter, and splash with a little extra milk.

Step 3Bake at 350 degrees for 1 hour or internal temperature reaches 160 degrees.

Step 4Let rest for 15 minutes before slicing. Enjoy!
