I stuff Poblano (sp) peppers with this mixture sometimes. But you can do it either way. It's good. I also have down to use pork and beef but you could just as well use chicken, turkey etc.

Ingredients

  • 1 pound ground beef
  • 1 pound ground pork, chicken or turkey
  • 1/2 - onion chopped
  • 1 1/2 cups cooked rice
  • 3 - poblanos chopped *
  • 3 - cloves chopped garlic
  • 2 teaspoons mccormick grill mates chipotle and roasted garlic seasoning
  • 1 can old elpaso enchilada sauce
  • 1 1/2 teaspoons cumin
  • - salt and pepper
  • 1 1/2 cups grated colby / jack cheese

How To Make mexican meatloaf

  • Step 1
    Preheat oven to 350 * if you are going to stuff the peppers, clean out the seeds and prepare them for stuffing. You will need more peppers however for this amount of meat.
  • Step 2
    put meats into a large mixing bowl. add in cooked rice and seasonings, onion and garlic, and chopped peppers too. Mix very well.
  • Step 3
    this is when you stuff the peppers or place meat into a sprayed oven safe dish or pan. Pour over the Old Elpaso enchilada sauce. Bake 45 minutes, then top with cheese and bake another 15 minutes. There will be a lot of juice in the pan.
