I stuff Poblano (sp) peppers with this mixture sometimes. But you can do it either way. It's good.

I also have down to use pork and beef but you could just as well use chicken, turkey etc.

ground beef
1 lb
ground pork, chicken or turkey
onion chopped
1 1/2 c
cooked rice
poblanos chopped *
cloves chopped garlic
2 tsp
mccormick grill mates chipotle and roasted garlic seasoning
1 can(s)
old elpaso enchilada sauce
1 1/2 tsp
salt and pepper
1 1/2 c
grated colby / jack cheese

How to Make Mexican Meatloaf


  • 1Preheat oven to 350

    * if you are going to stuff the peppers, clean out the seeds and prepare them for stuffing. You will need more peppers however for this amount of meat.
  • 2put meats into a large mixing bowl. add in cooked rice and seasonings, onion and garlic, and chopped peppers too.
    Mix very well.
  • 3this is when you stuff the peppers or place meat into a sprayed oven safe dish or pan. Pour over the Old Elpaso enchilada sauce. Bake 45 minutes, then top with cheese and bake another 15 minutes. There will be a lot of juice in the pan.
