mexican meatloaf
I stuff Poblano (sp) peppers with this mixture sometimes. But you can do it either way. It's good. I also have down to use pork and beef but you could just as well use chicken, turkey etc.

Ingredients
- 1 pound ground beef
- 1 pound ground pork, chicken or turkey
- 1/2 - onion chopped
- 1 1/2 cups cooked rice
- 3 - poblanos chopped *
- 3 - cloves chopped garlic
- 2 teaspoons mccormick grill mates chipotle and roasted garlic seasoning
- 1 can old elpaso enchilada sauce
- 1 1/2 teaspoons cumin
- - salt and pepper
- 1 1/2 cups grated colby / jack cheese
How To Make mexican meatloaf

Step 1Preheat oven to 350 * if you are going to stuff the peppers, clean out the seeds and prepare them for stuffing. You will need more peppers however for this amount of meat.

Step 2put meats into a large mixing bowl. add in cooked rice and seasonings, onion and garlic, and chopped peppers too. Mix very well.

Step 3this is when you stuff the peppers or place meat into a sprayed oven safe dish or pan. Pour over the Old Elpaso enchilada sauce. Bake 45 minutes, then top with cheese and bake another 15 minutes. There will be a lot of juice in the pan.
