I got this Mexican meatloaf recipe from a co-worker in the 1980s who brought it to a potluck we had at work. It's been 25 years since I last made it. When I made the recipe recently, it didn't turn out well because my instructions were confusing. So I've reorganized the recipe layout and hope you find it easy to use. I apologize, there are no photos. I will add photos when I next make this recipe. By the way, this meatloaf is delicious! Thank you to the co-worker whose name I can't remember.

Ingredients

  • 1 pound ground beef or turkey
  • 1/2 cup oatmeal, uncooked
  • 1 large egg
  • 1 can tomato sauce, divided (8 oz)
  • 1 can chopped green chiles, divided (4 oz)
  • 1 tablespoon + 1 tsp dried onion, divided
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/8 teaspoon garlic powder
  • 1/2 cup shredded cheddar cheese

How To Make mexican meatloaf

  • Step 1
    Mix the ground beef or turkey, oatmeal, egg, 1/4 cup of the tomato sauce, 2 Tbsp canned green chiles, 1 Tbsp dried onion, chili powder, and salt.
  • Step 2
    Form into 4 small loaves or 1 large loaf.
  • Step 3
    Cook the meatloaf at 350 degrees F for 25 to 30 minutes.
  • Step 4
    When the meatloaf is cooked, mix the remainder of the tomato sauce, the remaining green chiles, 1/8 tsp garlic powder, and the remaining 1 tsp dried onion.
  • Step 5
    Microwave the sauce for 1 minute and spoon the sauce over the cooked loaves.
  • Step 6
    After you spoon the sauce over the meatloaf, add the shredded cheddar cheese and serve.
