megan's coke meatloaf
I love putting pop in things like ham, so tried it with this meatloaf. I would prefer, after this recipe, to make no other meatloaf recipes! It was just amazing!

2 meatloaves, about 8-10 slices per loaf
Ingredients
- 1 package italian bread crumbs plus plain panko (to total 3 1/2 cups)
- 6 tablespoons ketchup
- 2 large eggs, well beaten
- 1 can diet coke
- accent, as needed, to personal taste
- 1/3 cup dried parsley
- 2 teaspoons dried basil
- 4 or so grinds pepper from pepper mill
- 1 red onion, diced fine
- 1 small tomato paste
- 1 can petite diced tomatoes
- 4 1/2 pounds hamburger (came that way at walmart, not in roll)

Step 1In large bowl put both breadcrumbs, parsley, basil, ketchup, pepper and onion. Stir well. Sprinkle Accent over top. Add eggs, mix well. Add can of diet coke. Mix well. Add hamburger, mix well. Put into 2 loaf pans (the large metal ones of mine). Bake at 350 degrees 30 min. Spread tomato paste over the tops of meatloaves, then with a slotted spoon, top with diced tomatoes and a little of their juice. Return to oven, cook 30 min. Check by cutting into center. Can take 55-75 min (check at 60 min, mine took almost 90 min in my large pans). Let sit 10 min out of oven before serving.
