meatloaf with bacon and caramelized onions
My husband had made a very similar meatloaf, but with the bacon, ketchup, and brown sugar on the bottom. Then he would turn it out onto a platter so the bacon was then on top. I added caramelized onions in mine and put the topping on top when I baked it, so the bacon got nice & crispy. Yum!!

Ingredients
- 1 1/4 pounds ground beef
- 1-2 tablespoon garlic, minced
- 1/2 onion, chopped
- 1-2 tablespoon extra virgin olive oil
- 4 tablespoons light brown sugar, divided
- 1/2 cup rolled oats
- 1 large egg
- 2 tablespoons Worcestershire sauce
- salt and pepper, to taste
- 1/4 pound bacon, cut into strips slightly wider than the width of the meatloaf. (you can use toothpicks to keep the bacon from curling up too much)
- 2-3 tablespoons ketchup
How To Make meatloaf with bacon and caramelized onions

Step 1Preheat oven to 375 degrees F.

Step 2Add chopped onion to a pan with the olive oil. Sauté until translucent. Sprinkle 2 tablespoons of the brown sugar, and cook to caramelize the onions.

Step 3In a bowl, combine all the ingredients except for the bacon, ketchup, and remaining brown sugar.

Step 4Form the mixture into a loaf pan (preferably one with a raised rack to keep the meatloaf up out of the grease).

Step 5On top of the loaf, spread the ketchup, the remaining brown sugar, and then add the bacon slices, laying across the meatloaf.

Step 6Bake for 1 to 1 1/4 hours, or until the meatloaf is done. Use a meat thermometer to check.

Step 7Remove from the oven and let the meatloaf rest for 5 to 10 minutes before slicing.
