Forget everything you thought you knew about meatloaf—especially if it involves ketchup. In our house, ketchup is a no-go (my husband made that clear!), so I got creative and crafted a version that brings all the cozy, nostalgic flavor of classic meatloaf, without the red stuff. Instead of a sugary glaze, this meatloaf is smothered in a rich, savory gravy that takes it to a whole new level of comfort food. It’s hearty, flavorful, and family-approved… even by the ketchup critics!

Ingredients For meatloaf and gravy

2 lbground beef

1 mdyellow onion, finely chopped

1 slicewhite bread, torn into small pieces

2 pkgLipton onion soup mix

2 lgeggs
-
2 dashWorcestershire sauce

1 tspgarlic pepper

3/4 tspseasoning salt

1 Tbspbutter or margarine

1 Tbspall-purpose flour

1 1/2 cwater

fresh chopped parsley (optional)
How To Make meatloaf and gravy

1Preheat oven to 350 degrees F.

2In a large bowl, use hands to thoroughly mix the ground beef, chopped onion, 2 eggs, bread pieces, Worcestershire sauce, 1 packet of the Lipton Soup Mix, garlic pepper, and seasoning salt.

3Shape the loaf into a 9x5 inch loaf pan.

4Bake uncovered for 30 minutes

5While the loaf is baking, prepare the gravy in a small/medium saucepan.

6Gravy: Melt butter or low/medium heat. Add flour. Mix thoroughly and allow the mixture to cook while mixing. Do not let it burn. Slowly add the water and whisk to ensure no lumps form. Add the 2nd packet of soup mix. Allow to thicken.

7Remove the meatloaf from the oven and glaze with about 3-4 tablespoons of the gravy. Return the meatloaf to the oven and bake for another 30 minutes.

8Reserve the remaining gravy to serve over the meatloaf.

9This pairs wonderfully with mashed potatoes! Garnish with chopped fresh parsley (optional).
