This Recipe is by far the best I've tried. My mom always made the topping with just ketchup and mustard with brown sugar. I added a few more items and it was a hit.

Ingredients

  • 2 pounds ground beef
  • 1 tablespoon olive oil
  • 1 onion ' finally diced
  • 3 garlic cloves minced
  • 2 torta bread, cubed
  • 1/2 cup milk
  • 1/4 cup chopped parsley
  • 2-3 tablespoons diced red bell pepper
  • 2 eggs
  • Dash worcestershire sauce
  • To Taste salt and pepper
  • 1 cup parmesan cheese or parmiggiano/reggiano cheese
  • FOR THE TOPPING
  • 3/4 cup ketchup
  • 2 tablespoons tomato paste
  • 1/4 cup brown sugar
  • 1 teaspoon dried mustard
  • 1 teaspoon smoked paprika
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

How To Make meatloaf

  • Step 1
    Preheat the oven to 350 degrees
  • Step 2
    Sautee the onion, red bell pepper and minced garlic in olive oil on medium heat until soft approximately 6 min. Cool Completely.
  • Step 3
    Add the cubed bread in a bowl and pour the milk over it. Let sit for a few minutes allowing the bread to soak up the milk.
  • Step 4
    In a large bowl combine the beef, milk soaked bread, the cooked onion and garlic, parsley, parmiggiano cheese, worchestershire sauce, eggs, salt and pepper. Mix until well combined not over mixing.
  • Step 5
    Place a cooling rack over a baking sheet ( or use a broiler pan) Place the meatloaf onto it and set aside.
  • Step 6
    In a small bowl ' mix together all of the ingredients for the topping. Smear half of it over the top and reserve the rest.
  • Step 7
    Bake the meatloaf for 50 minutes then smear the rest of the sauce on top and put it back in the overn for another 15 min.
