Ingredients
- 1 can 8 oz can of tomato sauce
- 3 slices hickory smoked bacon
- 1/4 cup light brown sugar
- 1 large sweet yellow onion chopped
- 4 tablespoons butter
- 2 pounds ground chuck
- 1 tube saltine crackers crumbled
- 2 large eggs
- 1 teaspoon each salt, pepper, onion powder, garlic powder, worcestershire sauce
How To Make meat loaf with bacon sauce

Step 1In a saucepan saute the chopped onion with the butter until tender

Step 2Fry the bacon in a medium saucepan with lid. Once browned add the onions & butter and tomato sauce. Salt & Pepper to taste

Step 3Simmer until reduced 50% about 15 minutes

Step 4Combine ground chuck, crackers, eggs, seasonings mix well. After the sauce has cooled completely, add 1/2 cup of sauce into the meat mixture. Shape into a loaf pan prepared by spraying with vegetable oil to prevent sticking.

Step 5Pour remaining sauce over the shaped loaf and bake at 400 for apprx 1 hour. After about 30 minutes, drain off fat and return to oven. Before serving drain off all fat and let sit for 10 minutes. Best served with our Golden mashed potatoes and savory peas.
