I have been making Meat Loaf for over 55 years and this recipe is by far, the best tasting one I ever made. I will stop my search for the perfect recipe.......this is it !!

Ingredients
- 2 pounds ground beef
- 2-3 tablespoons butter
- 1 cup chopped onion
- 2 - celery ribs, chopped
- 2 tablespoons minced garlic (i use a bit more)
- - salt and pepper
- 1 teaspoon thyme, leaves
- 1 teaspoon paprika
- 2 teaspoons worcestershire sauce
- 1/3 cup ketchup
- 3 ounces shredded monterey jack cheese
- 1/2 cup chicken broth
- 1 - egg
- - cracker crumbs, enough to make meat the right consistency
- 1/3 cup parsley flakes
- 4 tablespoons brown sugar
- 1/2 cup ketchup
- - hot sauce, to your taste
How To Make meat loaf

Step 1Pre-heat oven to 350*

Step 2Heat butter in skillet. Add onion, celery, garlic, salt, pepper, thyme, paprika, Worcestershire sauce and ketchup. Sauté until onions/celery are soft.

Step 3Place ground beef in a large bowl. Add chicken broth, egg, cracker crumbs, Jack cheese and parsley. Mix well, adding more cracker crumbs to get the consistency you want.

Step 4Add the skillet mixture to the meat. Mix well. Form into a loaf and place in baking pan.

Step 5Mix brown sugar, ketchup and hot sauce. (taste to adjust the hot sauce) Spread on meat loaf. Bake at 350* for 1 1/2 hours, uncovered.
