I have been making Meat Loaf for over 55 years and this recipe is by far, the best tasting one I ever made. I will stop my search for the perfect recipe.......this is it !!

  • 2 lb
    ground beef
  • 2-3 Tbsp
  • 1 c
    chopped onion
  • 2
    celery ribs, chopped
  • 2 Tbsp
    minced garlic (i use a bit more)
  • ·
    salt and pepper
  • 1 tsp
    thyme, leaves
  • 1 tsp
  • 2 tsp
    worcestershire sauce
  • 1/3 c
  • 3 oz
    shredded monterey jack cheese
  • 1/2 c
    chicken broth
  • 1
  • ·
    cracker crumbs, enough to make meat the right consistency
  • 1/3 c
    parsley flakes
  • 4 Tbsp
    brown sugar
  • 1/2 c
  • ·
    hot sauce, to your taste

How to Make Meat Loaf


  1. Pre-heat oven to 350*
  2. Heat butter in skillet. Add onion, celery, garlic, salt, pepper, thyme, paprika, Worcestershire sauce and ketchup. Sauté until onions/celery are soft.
  3. Place ground beef in a large bowl. Add chicken broth, egg, cracker crumbs, Jack cheese and parsley. Mix well, adding more cracker crumbs to get the consistency you want.
  4. Add the skillet mixture to the meat. Mix well. Form into a loaf and place in baking pan.
  5. Mix brown sugar, ketchup and hot sauce. (taste to adjust the hot sauce) Spread on meat loaf. Bake at 350* for 1 1/2 hours, uncovered.
