My husband doesn't know that it's not beef. He loves it and I've had many compliments from friends.

Ingredients

  • 1/2 cup carrot, shredded
  • 1 cup finely chopped onion
  • 1 cup grated parmesan cheese
  • 3/4 cup quick cooking oats
  • 1 tablespoon minced fresh garlic
  • 1 large egg lightly beaten
  • 1/2 jar refrigerated basil pesto
  • 3/4 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 8 ounces canned tomato sauce
  • 20 ounces lean ground turkey
  • 1/2 cup ketchup

How To Make italian turkey meatloaf

  • Step 1
    Process carrots in a food processor until finely ground. Stir together next 5 ingredients with carrots in a large bowl. Combine salt, pepper and tomato sauce into carrot mixture.
  • Step 2
    Add turkey to carrot mixture, combining with hands until well blended. Line loaf pan with heavy duty foil; coat lightly with cooking spray. Place turkey into pan and form into a loaf.
  • Step 3
    Bake at 400 for 30 minutes and spread ketchup over meatloaf. Bake an additional 30 minutes or until thermometer inserted in center of mealoaf registers 165 degrees.
  • Step 4
    Let meatloaf stand 10 minutes. Slice and serve.
