This meatloaf recipe is buzzy and sweet, filled with honey mustard and crushed honey roasted peanuts. It's delicious!

Ingredients

  • MEATLOAF
  • 1 tablespoon olive oil
  • 1 large vidalia sweet onion, peeled and diced
  • 1 tablespoon sweet and tangy seasoning
  • 2 tablespoons honey mustard
  • 2 cups crushed honey roasted peanuts, divided
  • 2 pounds lean ground beef
  • 1 cup rolled oats
  • 3 large eggs
  • 1 tablespoon montreal steak seasoning
  • 1/2 cup honey
  • 1 teaspoon garlic powder
  • GLAZE
  • 1 cup honey mustard
  • 1/2 cup red pepper jelly
  • 3/4 cup heavy cream

How To Make honey roasted meatloaf

  • Step 1
    Heat olive oil in a large skillet over medium-high heat. Add diced vidalia onion and saute for 10 minutes, or until softened. Stir in sweet and tangy seasoning and honey mustard. Remove from heat and set aside.
  • Step 2
    Preheat oven to 350 degrees F.
  • Step 3
    Coat a 9x5-inch loaf pan with cooking spray. Sprinkle with 1 cup crushed honey roasted peanuts.
  • Step 4
    In a large bowl, combine ground beef, rolled oats, eggs, remaining crushed honey roasted peanuts, montreal steak seasoning, honey, garlic powder and sauteed diced onion; mix together until combined.
  • Step 5
    Place beef mixture in a prepared loaf pan and bake for 20 minutes or until cooked through.
  • Step 6
    For the glaze: in a medium bowl, combine honey mustard, red pepper jelly and heavy cream. Whisk together until blended.
  • Step 7
    Take the meatloaf out of the oven and spread the glaze on the meatloaf. Return it to the oven for 30 minutes.
  • Step 8
    After that, remove the meatloaf from the oven. Transfer to a serving plate and drizzle with the glaze. Serve warm.
