easy italian turkey meatloaf

I am definitely a meatloaf lover. I usually bake with beef and sometimes mix it in with some ground pork. For those who only eat fish and chicken, this is a very good and savory main course. The breadcrumbs and sausage add enough herbal influence, that there is no need for any additional herbs. I prefer the red bell pepper to the green in this recipe, as they are sweeter. The glaze is a sort of make do ketchup, Italian Style. I really like this meatloaf, as it is not some alternative to something better. This meatloaf "ROCKS"...!!!

Ingredients

  • 1 medium red bell pepper, chopped
  • 1/2 large onion, chopped
  • 2 large eggs, beaten
  • 1 teaspoon kosher salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon garlic powder
  • 1 cup italian bread crumbs
  • 1/2 cup milk
  • 2 tablespoons tomato paste
  • 1 1/2 pounds ground turkey, not extra lean
  • 1 pound chicken italian sausage, removed from casing
  • FOR THE GLAZE
  • 3 tablespoons tomato paste
  • 1 tablespoon balsamic vinegar
  • 1 tablespoon honey

How To Make easy italian turkey meatloaf

  • Step 1
    In a large bowl place the meatloaf ingredients (minus the turkey and sausage) and mix well.
  • Step 2
    Add the meats and mix well. I do this with my hands.
  • Step 3
    Place the meatloaf mix in a well greased pan. I line mine with parchment paper. Pat down to shape loaf in to desired shape.
  • Step 4
    Mix the glaze ingredients in a small bowl and frost the top of the meatloaf. Add some extra freshly ground pepper on top if you desire.
  • Step 5
    Bake in a 350 degree oven for 1 hour 30 minutes. Turn up heat to 450 degrees the last 10 minutes to crisp and brown.
  • Step 6
    Remove from oven and rest on a hot pad for at least 20 minutes before slicing.
