cracker barrel meatloaf
I got this recipe from a good friend in 2017, finally got around to making this and glad I did, best meatloaf I have ever made. Excellent flavor from the from the use of the butter crackers and cheese. Highly recommended.

Ingredients
- 2 eggs
- 2/3 cup milk
- 32 butter crackers, like ritz
- 1 small to medium onion, diced
- 120 grams cheddar cheese, shredded, (4 oz)
- 1 teaspoon salt
- 1/4 teaspoon pepper, i used black and white pepper
- 1 kilogram ground beef, (2 lb)
- 1/2 cup ketchup, or chili sauce
- 1/2 cup brown sugar
- 1 teaspoon mustard
How To Make cracker barrel meatloaf

Step 1Preheat your oven to 180° C (350° F). Get out two loaf pans. I used my Pyrex pans.

Step 2In a mixing bowl, beat eggs. Add milk and crackers and stir together. Add the onion and cheese and stir together. Stir in the salt and pepper.

Step 3Add ground beef. Mix well.

Step 4Divide mixture between the 2 loaf pans, pack down with the back of the mixing spoon, and smooth off the tops.

Step 5Bake for 30 minutes. While the meatloaf is baking, mix together the ketchup, brown sugar, and mustard to make the topping. I used chili sauce in place of the ketchup.

Step 6After 30 minutes of baking, spoon ¼ of the topping onto each meatloaf, return the pans to the oven and bake for another 10 minutes. Then spoon on the rest of the topping, dividing between the loaves, and bake for another 10 minutes. Remove from oven and let the loaves rest for 5 minutes.

Step 7Slice and serve right from the pan with your favorite side dishes, and enjoy.
