chorizo meatloaf
This meatloaf recipe I created is half beef and half chorizo and it's stuffed.

Ingredients
- 1 tablespoon avocado oil
- 1 medium vidalia sweet onion, peeled and sliced
- 2 banana peppers, chopped
- 1 tablespoon taco seasoning
- 1 pound lean ground beef
- 6 ounces soft Mexican chorizo, removed from casing and crumbled
- 1 tablespoon sea salt mixed with black pepper
- 1 teaspoon ground cumin
- 3 egg whites
- 1/2 cup ranch dressing
- 3/4 cup panko bread crumbs
- 2 cups shredded sharp cheddar cheese, divided
How To Make chorizo meatloaf

Step 1Preheat oven to 350 degrees F.

Step 2Heat avocado oil in a large, deep skillet over medium heat. Add sliced vidalia onion and chopped banana peppers, saute for 5 minutes until tender. Season with taco seasoning. Remove from heat. Set aside.

Step 3In a large bowl, combine ground beef, crumbled Mexican chorizo, sea salt/black pepper, ground cumin, egg whites, ranch dressing and bread crumbs; mix well.

Step 4Spoon 1/2 of meat mixture into the bottom of an 8- x 4-inch loaf pan. Arrange sauteed vegetables and 1 cup shredded sharp cheddar cheese on top.

Step 5Top with remaining meat mixture, patting to combine both halves. Add remaining shredded sharp cheddar cheese on top.

Step 6Bake for 30 minutes or until done. Cool completely. Cut into 8 slices and serve.
