brown sugar meatloaf
This is a favorite of my daughter and I, we created it one afternoon when supplies were low and we were looking for a way to transform plain hamburger into something yummy and comforting at the same time.

Ingredients
- 1 1/2 pounds ground beef
- 1 bag saltine crackers
- 1 medium - onion
- 1/4 to 1/2 cup brown sugar
- 2 - eggs
- 1/2 cup ketchup
- to taste - salt and pepper
How To Make brown sugar meatloaf

Step 1Preheat oven to 375.

Step 2In a bowl, break crackers into very small pieces and crumbs. Add brown sugar, salt and pepper, eggs and ground beef. Dice onions into medium to small pieces. Add to cracker mixture. Mix together well (I like to use my hands!) being sure that ingredients, particularly brown sugar, are mixed well and has no small clumps. Turn into a small square baking pan, spreading out well to fill the corners, or shape into a loaf in larger pan (You will probably want to use a bit more ketchup for a loaf shape)

Step 3Bake uncovered for approx 45 minutes, until meat has shrunk away from sides and is no longer pink in the middle. Spread with ketchup and bake an additional five to ten minutes. Serve piping hot - great with mashed potatoes and fresh/frozen veggies!
