brown sugar meatloaf (piggie optional)

My husband John came up with this sauce and it makes the meatloaf juicy & delicious.

Ingredients

  • 1/2 cup brown sugar, lightly packed
  • 1/2 cup ketchup
  • 1 1/2 pounds ground beef, lean (or beef/pork[/veal] meatloaf mix)
  • 1/4 cup milk
  • 2 - eggs
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper, ground
  • 1 small onion, chopped
  • 1/4 teaspoon ginger, ground
  • 3/4 cup saltine cracker crumbs, finely crushed
  • 3-4 slices bacon (optional)

How To Make brown sugar meatloaf (piggie optional)

  • Step 1
    Preheat oven to 350F. Lightly grease or spray a 5x9” loaf pan.
  • Step 2
    Line the bottom of the pan with bacon strips, if using. Press the brown sugar into the bottom of the pan & spread the ketchup over the sugar.
  • Step 3
    In a mixing bowl, mix thoroughly all remaining ingredients & shape into a loaf. Place on top of the ketchup/sugar/bacon.
  • Step 4
    Bake in preheated oven for 1 hour or until juices run clear.
  • Step 5
    Let pan rest for 5 minutes. Flip pan over onto a platter so the bacon/ketchup is on top of meatloaf. Slice & serve.
