My kids request meatloaf quite regularly, and I try to find new meatloaf recipes, so dinnertime doesn't get routine and predictable. And I saw this recipe on Facebook not too long ago, and I had to give it a try. It's quite good and adds a bit of pizzazz to a plain meatloaf. It would be good with the more usual choice of mashed potatoes on the side, but I usually serve it with French Fries on the side (which I include extra Thousand Island dressing, for dipping). 6 to 8 servings.

Ingredients

  • MEATLOAF
  • 2 pounds lean ground beef
  • 2 large eggs, beaten
  • 1 cup plain bread crumbs
  • 1/2 cup diced onion
  • 1/2 cup Thousand Island dressing
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 6 - 8 slices American cheese, shredded (I just cut them into small bits)
  • 1/3 cup dill pickle, finely chopped (or you can use green sweet pickle relish)
  • EXTRA INGREDIENTS
  • 2 tablespoons sesame seeds
  • 2 - 3 cups iceberg lettuce, finely shredded
  • 2/3 cup Thousand Island dressing - for serving

How To Make big mac meatloaf

  • Step 1
    Preheat oven to 350 degrees F. Line a baking sheet with parchment paper.
  • Step 2
    Mix together all meatloaf ingredients (ground beef to chopped pickle) until well combined. Form it into a loaf shape, and place it on the parchment-lined baking sheet. Smooth the top so it’s level (not domed). Sprinkle sesame seeds across the top of the loaf.
  • Step 3
    Place the baking sheet in the oven, and bake for about 60 to 70 minutes.
  • Step 4
    Remove from the oven, and pour the 2/3 cup Thousand Island dressing across the top. Then slice the loaf into 6 to 8 individual portions.
  • Step 5
    Arrange about 1/2 cup or so of shredded lettuce on each serving plate. Arrange a meatloaf slice over the shredded lettuce, and serve immediately.
