Ingredients

  • 1 tablespoon olive oil
  • 1 pound thick sliced bacon, cut into 1/2-inch pieces
  • 1 medium red bell pepper, diced
  • 1 medium yellow bell pepper, diced
  • 1 medium purple onion, chopped
  • 4 tablespoons steak seasoning, divided
  • 1 teaspoon garlic powder
  • 2 1/2 teaspoons ground cumin
  • 1 pound lean ground beef
  • 3 large eggs
  • 1 packet dry onion soup mix
  • 3/4 cup Panko bread crumbs
  • 3 tablespoons steak sauce mixed with brown sugar
  • 1 cup shredded Mexican cheese blend

How To Make bacon medley meatloaf

  • Step 1
    Preheat the oven to 350 degrees F.
  • Step 2
    Coat a 9x5-inch loaf pan with cooking spray.
  • Step 3
    Heat olive oil in a large, deep skillet over medium heat. Add raw bacon pieces, diced red and yellow peppers, and chopped purple onion. Cook and saute for 6 minutes or until the bacon pieces are brown and crispy and the vegetables are tender.
  • Step 4
    Season with 2 tablespoons steak seasoning, garlic powder, and ground cumin. Remove from heat.
  • Step 5
    Add half of the bacon medley in a greased loaf pan and spread evenly.
  • Step 6
    In a large bowl, combine ground beef, eggs, onion soup mix, remaining steak seasoning, bread crumbs, steak sauce/brown sugar, and remaining bacon medley; mix well. Form into a loaf.
  • Step 7
    Transfer into prepared loaf pan. Sprinkle with Mexican cheese blend all over the meatloaf.
  • Step 8
    Bake for 30 minutes or until the cheese is melted. Cool completely for 10 minutes before serving.
