Ingredients
- 1 tablespoon olive oil
- 1 pound thick sliced bacon, cut into 1/2-inch pieces
- 1 medium red bell pepper, diced
- 1 medium yellow bell pepper, diced
- 1 medium purple onion, chopped
- 4 tablespoons steak seasoning, divided
- 1 teaspoon garlic powder
- 2 1/2 teaspoons ground cumin
- 1 pound lean ground beef
- 3 large eggs
- 1 packet dry onion soup mix
- 3/4 cup Panko bread crumbs
- 3 tablespoons steak sauce mixed with brown sugar
- 1 cup shredded Mexican cheese blend
How To Make bacon medley meatloaf

Step 1Preheat the oven to 350 degrees F.

Step 2Coat a 9x5-inch loaf pan with cooking spray.

Step 3Heat olive oil in a large, deep skillet over medium heat. Add raw bacon pieces, diced red and yellow peppers, and chopped purple onion. Cook and saute for 6 minutes or until the bacon pieces are brown and crispy and the vegetables are tender.

Step 4Season with 2 tablespoons steak seasoning, garlic powder, and ground cumin. Remove from heat.

Step 5Add half of the bacon medley in a greased loaf pan and spread evenly.

Step 6In a large bowl, combine ground beef, eggs, onion soup mix, remaining steak seasoning, bread crumbs, steak sauce/brown sugar, and remaining bacon medley; mix well. Form into a loaf.

Step 7Transfer into prepared loaf pan. Sprinkle with Mexican cheese blend all over the meatloaf.

Step 8Bake for 30 minutes or until the cheese is melted. Cool completely for 10 minutes before serving.
