authentic caribbean meatloaf
I've traveled to the Caribbean frequently over the years and fell in love with jerk style anything! Hence, this meatloaf recipe was born. Have made this many times for family and friends and most of them are still alive.....Kidding! Hope you enjoy! George

Ingredients
- 3/4 pound ground pork
- 1 pound lean ground beef
- 1/2 cup tomato sauce
- 1 cup soft bread crumbs
- 1 large egg, beaten or 1/4 cup egg substitute
- 1/2 cup finely chopped green onion
- 2-3 teaspoons pickapeppa or worcestershire s
- 1 teaspoon seasoning salt
- 1/2 teaspoon fresh ground pepper
- FOR THE SAUCE:
- 2 tablespoons tomato sauce
- 1/4 cup crushed pineapple in juice, drained
- 2 tablespoons minced onion
- 3 teaspoons dark brown sugar
- 3 teaspoons fresh lime juice
- 2 teaspoons pickapeppa sauce or worcestershire
- 1/4 teaspoon ground allspice
- 1/4 teaspoon seasoning salt
- 1/4 teaspoon ground ginger
- 1/4 teaspoon dry mustard
How To Make authentic caribbean meatloaf

Step 1In a large bowl, combine ingredients for the meatloaf until just combined. Don't over mix!

Step 2Preheat oven to 350F. Spray 8 x 4 loaf pan with cooking spray. Pour meatloaf mixture into pan and bake for 1 hour.

Step 3Combine sauce ingredients. Pour over meatloaf and continue baking an additional 5-7 minutes. Let cool 5 minutes and enjoy!

Step 4Recipe notes: If you can find the Pickapeppa (www.pickapeppa.com) sauce, it adds a genuine Jamaican flavor to the meatloaf while not being hot. Additionally, you can add your favorite hot sauce if you like it spicier!
