I've traveled to the Caribbean frequently over the years and fell in love with jerk style anything! Hence, this meatloaf recipe was born. Have made this many times for family and friends and most of them are still alive.....Kidding! Hope you enjoy! George

Ingredients For authentic caribbean meatloaf

  • 3/4 lb
    ground pork
  • 1 lb
    lean ground beef
  • 1/2 c
    tomato sauce
  • 1 c
    soft bread crumbs
  • 1 lg
    egg, beaten or 1/4 cup egg substitute
  • 1/2 c
    finely chopped green onion
  • 2-3 tsp
    pickapeppa or worcestershire s
  • 1 tsp
    seasoning salt
  • 1/2 tsp
    fresh ground pepper
  • 2 Tbsp
    tomato sauce
  • 1/4 c
    crushed pineapple in juice, drained
  • 2 Tbsp
    minced onion
  • 3 tsp
    dark brown sugar
  • 3 tsp
    fresh lime juice
  • 2 tsp
    pickapeppa sauce or worcestershire
  • 1/4 tsp
    ground allspice
  • 1/4 tsp
    seasoning salt
  • 1/4 tsp
    ground ginger
  • 1/4 tsp
    dry mustard

How To Make authentic caribbean meatloaf

    In a large bowl, combine ingredients for the meatloaf until just combined. Don't over mix!

    Preheat oven to 350F. Spray 8 x 4 loaf pan with cooking spray. Pour meatloaf mixture into pan and bake for 1 hour.

    Combine sauce ingredients. Pour over meatloaf and continue baking an additional 5-7 minutes. Let cool 5 minutes and enjoy!

    Recipe notes: If you can find the Pickapeppa ( sauce, it adds a genuine Jamaican flavor to the meatloaf while not being hot. Additionally, you can add your favorite hot sauce if you like it spicier!
