Ingredients
- CHICKEN
- 2 large chicken breasts, cubed
- 3 - 4 tablespoons grapeseed or canola oil, or as needed
- freshly ground black pepper, to taste (I always use mixed peppercorns)
- 1 cup unbleached all-purpose flour
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- 1 cup buffalo wing sauce (recipe on cf website)
- SALAD
- 8 cups torn romaine lettuce, washed, drained and chopped
- 1 cup diced red onions
- 1 cup diced red peppers
- 1 cup diced celery
- 1 cup peeled and shredded carrots
- 1 cup shredded red cabbage
- 1 cup cherry tomatoes, washed and halved
- 1/2 english cucumber, peeled and diced
- 1 cup blue cheese, crumbled
- blue cheese or ranch dressing (both recipes on cf website)
How To Make buffalo chicken salad

Step 1Preheat oven to 400ºF and line a large baking sheet with foil that has been lightly greased with cooking spray; set aside.

Step 2To make the chicken, add chicken cubes to a large bowl and pour on grapeseed oil, enough to coat. Season generously with freshly ground black pepper and stir well; add more oil and black pepper if needed.

Step 3In a large re-sealable plastic bag, combine flour, garlic powder and smoked paprika.

Step 4Working in batches, add chicken cubes to the bag. Close it and shake vigorously until nicely coated. Using a slotted spoon, transfer them to the prepared baking sheets.

Step 5When all coated, spray the cubes with cooking spray and transfer to the preheated oven. Bake for 7 minutes.

Step 6A few minutes later, remove them from the heat and flip the cubes.

Step 7Return them back to the oven for 4 minutes or until the internal temperature reaches 165ºF.

Step 8Remove from the heat and put them in a medium bowl. Pour buffalo wing sauce over and stir to coat.

Step 9Drop them in a single layer back on the baking sheet and return the coated chicken to the oven without the heat on for 10 minutes.

Step 10To assemble… Place lettuce first, the remaining vegetables on top followed by the chicken cubes on each side of the bowl. Sprinkle on crumbled blue cheese and drizzle on either blue cheese dressing or ranch dressing.
