This is a good way to reduce calories, if that's your thing. Regardless, it's easy, light and quick. It also works with rotisserie chicken. I usually substitute zucchini for the cucumber, but other subs can be made to your liking including skipping the meat entirely.

Ingredients For asian bowl

  • 1 1/2 tsp
    soy sauce
  • 1 Tbsp
    sesame oil
  • 1/2 Tbsp
    honey
  • 1 1/2 tsp
    grated ginger (or 1 tsp. ground ginger)
  • 2 c
    thinly sliced Napa or other cabbage
  • 1/2
    cucumber, sliced thin
  • 1 c
    thinly sliced red bell pepper
  • 1 c
    shelled edamame
  • 1 c
    cooked chicken breast, cut into strips or cubes
  • 1 c
    brown rice, cooked
  • 1 c
    snow peas
  • 2 Tbsp
    peanuts, chopped
  • 2
    green onions, chopped

How To Make asian bowl

  • 1
    Mix soy sauce, sesame oil, honey and ginger together in small bowl. Set aside.

    Divide cabbage between 2 bowls. Divide rest of ingredients between bowls arranging on top of cabbage.

    Drizzle 1/2 of dressing over each salad and garnish with peanuts and green onions.
