Ingredients

  • 1 pound rabbit liver
  • 2 medium onions, sliced
  • 2 tablespoons tomato paste
  • 1 1/2 cups tomato puree
  • 1/4 pound snap or snow peas
  • 1 cup white wine
  • 1 teaspoon curry powder
  • 2 cloves garlic
  • 1 bay leaf
  • olive oil

How To Make spaghetti in rabbit liver sauce

  • Step 1
    Heat some olive oil in a large skittle and add onions, whole garlic, bay leaf and diced rabbit liver.
  • Step 2
    When the liver is well browned from all sides sprinkle the curry powder and add the cup of white wine.
  • Step 3
    When the wine has reduced add the tomato paste followed by the tomato puree and mix well.
  • Step 4
    Cover tightly and stew slowly till the sauce combines, or about 1 hour. Five minutes from the end, add the peas to the sauce.
  • Step 5
    Traditionally this sauce is served with spaghetti however any other long pasta can be used.
