Ingredients
- 1 pound rabbit liver
- 2 medium onions, sliced
- 2 tablespoons tomato paste
- 1 1/2 cups tomato puree
- 1/4 pound snap or snow peas
- 1 cup white wine
- 1 teaspoon curry powder
- 2 cloves garlic
- 1 bay leaf
- olive oil
How To Make spaghetti in rabbit liver sauce

Step 1Heat some olive oil in a large skittle and add onions, whole garlic, bay leaf and diced rabbit liver.

Step 2When the liver is well browned from all sides sprinkle the curry powder and add the cup of white wine.

Step 3When the wine has reduced add the tomato paste followed by the tomato puree and mix well.

Step 4Cover tightly and stew slowly till the sauce combines, or about 1 hour. Five minutes from the end, add the peas to the sauce.

Step 5Traditionally this sauce is served with spaghetti however any other long pasta can be used.
