Another experiment after my daughter's friend brought me some geese.

Ingredients

  • 1 - goose
  • 1 bag crab boil
  • 1 jar sauerkraut
  • 2 - onions, quartered
  • 1 - bell pepper, halved
  • 2 stalks celery, chopped coarsely
  • CASSEROLE
  • 1/2 cup butter
  • 2 cloves garlic, minced
  • 2 - green onions, chopped
  • 1/4 cup all purpose flour
  • 1 cup broth from goose
  • 1/2 cup red wine
  • 2 tablespoons parsley
  • 1 1/2 cups half and half
  • 1 package long grain and wild rice, cooked
  • 4 ounces mushroom pieces, drained, and chopped
  • 1 can cream of mushroom sour
  • 8 ounces pepper jack cheese, grated

How To Make gooserole

  • Step 1
    Stuff goose with sauerkraut. Place in crockpot with crab boil, onions, bell pepper, and celery. Cook on low in crock pot for 6 - 8 hours until tender. Debone goose. save broth.
  • Step 2
    Saute onion, green onion, garlic and mushrooms in butter. Then mix in flour.
  • Step 3
    Add stock, wine, cream, goose, and cooked rice. Add salt and pepper to taste. Place in a casserole dish, cover with grated pepper jack cheese. Bake at 350 degrees for 30 minutes.
