Ingredients
- 1 - rabbit, cut up
- 1 1/2 cups sliced onions
- 1/4 pound bacon, diced
- 1 cup peas
- 1 cup dry white wine, preferably soave
- 1 large juice of 1 large lemon
- 1/2 cup unbleached flour
- 1 tablespoon fresh rosemary
- 3 tablespoons olive oil
- - salt and pepper to taste
How To Make farmer style rabbit

Step 1Place rabbit in large bowl and add the lemon juice. Let it rest for 15 to 30 minutes. Remove and dry well.

Step 2Combine the flour, salt and pepper and lightly flour the rabbit pieces.

Step 3In a large skillet, heat the olive oil over medium high heat. Add the rabbit pieces and brown them on all sides. Add the bacon and sauté for 2 minutes. Sprinkle with the rosemary and remove from the heat.

Step 4Spread the onions in the bottom of a baking dish. Arrange the rabbit pieces, with the bacon on top. Add the wine, peas, salt and pepper to taste.

Step 5Cover the dish with foil and bake for 35 minutes or until the rabbit is tender. Serve in baking dish.
