Ingredients

  • 4 cups leftover turkey meat
  • 1 - onion, sliced
  • 2 cans enchilada sauce
  • 1 package enchilada mix
  • 1 package corn tortillas
  • 4 cups shredded cheese, mexican blend
  • 2 tablespoons coconut oil

How To Make turkey enchiladas

  • Step 1
    Heat 1 T oil in fry pan over med-high heat. Add onion, saute until tender. Add turkey, heat 3 minutes. Remove from heat.
  • Step 2
    Combine enchilada sauce and mix. Set aside.
  • Step 3
    Fry each corn tortilla in oil (about 1/8 t per tortilla), both sides.
  • Step 4
    Fill tortilla's with turkey meat and 2 T cheese. Roll filled tortilla, place in 13x9 pan. Repeat until all tortillas are filled and rolled.
  • Step 5
    Pour enchilada sauce over rolled tortillas, cover with remainder of cheese. bake for 20 minutes, until cheese is melted.
