sweet potato & turkey casserole
MY COUSIN NANCY GAVE ME THIS RECIPE. IT'S MARVELOUS WHEN YOU'RE TIRED OF THOSE TURKEY SANDWICHES!! AS THIS IS BAKING YOU'RE TASTE BUDS WILL BE DANCING FROM THE AROMA OF NUTMEG, CINNAMON & SWEET POTATOES!! ENJOY!

Ingredients
- 2 cups canned sweet potaoes, mashed.
- 2 tablespoons packed brown sugar
- 1/2 teaspoon cinnamon
- 1/8 tsp & dash nutmeg
- 1/3 cup evaporated milk
- 1/2 cup chicken broth ( reserve 1/4 c to add to onions as needed. i use swanson)
- 1/4 cup finely minced onion
- 1 can cream of chicken soup
- 3 cups cut up cooked turkey
- 3 tablespoons water
How To Make sweet potato & turkey casserole

Step 1MIX TOGETHER: SWEET POTATOES, BROWN SUGAR, CINNAMON, NUTMEG & MILK IN A MEDIUM BOWL.

Step 2SPRAY YOUR 10" ROUND CASSEROLE DISH WITH PAM. SPOON THE MIXTURE AROUND THE INSIDE EDGE TO FORM A RING.

Step 3HEAT THE BROTH & ONION IN A SKILLET TIL IT BOILS. YOU MAY NEED TO ADD THE OTHER 1/4 CUP BROTH AS THE ONIONS GET TENDER. STIR OCCASIONALLY.

Step 4STIR IN THE SOUP, TURKEY & WATER. COOK & STIR TIL BUBBLING.

Step 5SPOON TURKEY MIXTURE INTO THE CENTER OF YOUR SWEET POTATO RING.

Step 6BAKE @ 350 DEGREES FOR APPROXIMATELY 30 - 35 MINUTES....YOU WANT THE TURKEY TO BE HOT & BUBBLING. **I LET IT REST FOR 5 MINUTES BEFORE SERVING.
