My version of stuffed potatoes. This recipe calls for using ground turkey, which I use my leftover remnants of Thanksgiving turkey for. But, you can use ground beef, which I've used in the past, and also shredded chicken, which I've also used. There is a restaurant close by that does something similar except they use shrimp with and etoufee over the potatoes.

Ingredients

  • 1 package lawry's spices & seasonings for chili
  • 1 pound ground turkey, beef or shredded chicken
  • 1 can (15.25-ozs) kidney beans, undrained
  • 1 can (14.50 ozs) whole peeled tomatoes, undrained and cut-up
  • 1/2 cup water
  • 8 medium russet potatoes, washed and pierced with fork
  • 1 cup grated cheddar cheese
  • 1/2 cup thinly sliced green onions

How To Make stuffed taters ala tammy

  • Step 1
    In large glass bowl, prepare spices & seasonings for chili with ground turkey, beef or chicken, tomatoes and water according to package microwave directions; keep warm.
  • Step 2
    Microwave potatoes on HIGH 25 minutes, turning over after 12 minutes. Slit potatoes lengthwise and pull back skin. Fluff with fork.
  • Step 3
    Top each potato with 1/2 to 3/4 cup prepared chili, 2 tablespoons cheese and 1 tablespoon green onions.
