My Mother has always talked about a recipe "Shipwreck" and I had to check it out. I personally didn't care for it. This is my version of it Mexican style....My hubby loved it!!

Ingredients
- 2 pounds ground turkey browned
- 1 package taco seasoning mix
- 3 tablespoons salsa, chunky
- 1 can tomatoes and chiles
- 1/2 - onion chopped
- 1 tablespoon cilantro, dried
- 1 tablespoon cumin
- 1 tablespoon garlic powder
- 1 tablespoon onion powder
- 1 tablespoon tony chachere's cajun seasoning
- 1 package tater tots frozen
- 1 can mexicorn drained
- 1 can black beans drained
- 1 cup monterey jack cheese
- 1 cup cheddar cheese
- 1 - tomato chopped
- 1/2 - head lettuce shredded
- 1 can refried beans
How To Make ma keith's mexican shipwreck

Step 1Season ground turkey with cajun seasoning, garlic powder, onion powder and chopped onion. When no longer pink, add tomatoes with green chiles, taco seasoning, salsa, black beans, refried beans and mexicorn. Let simmer for 10 minutes.

Step 2Preheat oven to 350 degrees, spray bottom of 9 x 13 pan. Pour meat mixture into pan, sprinkle with monterey jack and cheddar cheese. Then top the meat mixture with frozen tater tots. Bake for 30 minutes until tater tots are brown and crunchy. Then add more cheese to the top of tater tots and bake for additional 5 minutes.

Step 3When plating, add lettuce, tomato, sour cream and salsa to the top of tater tot and meat mixture.
