lean ground turkey breast
1/2 c
sun dried tomatoes, snipped into quarters
2 c
tomato juice
2 c
quick-cooking rice, uncooked
1 can(s)
(11 oz) whole kernel corn with green and red peppers, undrained
3/4 c
1 pkg
(1 1/4 oz) taco seasoning mix
1/2 c
(2 oz) shredded cheddar cheese
1/2 c
crushed corn chips

How to Make Fiesta Skillet Supper


  • 1Heat large nonstick skillet over medium-high heat until hot. Add turkey and tomatoes. Cook, stirring, 5 to 6 minutes or until turkey is no longer pink.
  • 2Add tomato juice, rice, corn, water and taco seasoning. Stir until all rice is moistened and seasoning is blended into mixture. Bring to a boil; remove from heat.
  • 3Top with cheese, cover and allow to stand 5 to 6 minutes or until liquid is absorbed and cheese is melted. Top with corn chips before serving.
