potato & carrot tostadas
My sister in laws family lives in Mexico. They only eat meat maybe once a week, and that's usually on a Saturday or Sunday. When they do eat meat that usually means going to the yard and picking out a chicken. This is one of their usual week day dinners, very simple, very easy, and very inexpensive.

Ingredients
- 1 package corn tortillas
- 3 or 4 large potatoes
- 2 or 3 large carrots
- 1 can refried beans
- - oil to fry tortillas
- - any toppings you like, cheese, jalapeno, tomato, onion, cilantro, sour cream, lettuce
How To Make potato & carrot tostadas

Step 1peel and dice the potatoes and carrots and put in a pot to boil. I add some garlic powder , adobo powder and sazon to flavor it. when potatoes and carrots are tender , drain, set aside with the rest of your toppings.

Step 2in a fry pan, heat some oil and then fry the tortillas on both sides till crisp and then drain in a basket on paper towels.

Step 3heat the refried beans, spread some beans on the tortilla, sprinkle with cheese and top with a couple spoonfuls of potatoes and carrots and any other toppings you like. enjoy. I have just fed 9 people for under $5.00. simple, cheap, and tasty. 8]
