I was looking for a different way to use Italian sausage. Served it with a salad and my family loved it! WARNING: This is not a healthy recipe. Lots of fat and carbs, but delicious!

Ingredients

  • 1 package (5 pack) italian sausage
  • 1/2 - green bell pepper chopped
  • 1 - small sweet onion chopped
  • 1- 1 1/2 cans tomato paste
  • 1 - bulb garlic or as desired
  • 10 large flour tortillas
  • 1 - 2 cup package of shredded mozarella cheese

How To Make italian tortillas

  • Step 1
    Cook Italian Sausage in skillet adding onion and green pepper as it begins to show fat. When sausage is cooked thoroughly drain the mixture in a colander to remove fat. Pat with paper towels to remove more fat. Leave the mixture in the colander.
  • Step 2
    Heat oil in skillet. Spread a tortilla with some of the tomato paste and place it in hot oil tomato side up. Cook until golden brown. While tortilla is cooking, place sausage mixture and cheese on second tortilla. Remove first tortilla, turn it and place it on top of second tortilla. Carefully place the 'tortilla sandwich in hot oil and cook until golden brown. Remove it and with a pizza cutter slice into quarters. Place slices on a plate and keep it warm. If your oven has a warming drawer, use it.
  • Step 3
    Repeat steps above.
