chili enchilada burritos

I started doing this when my 22yr old was in junior high football. It always ran late so I came up with this idea for game night. Prepared it before and we nuked it after. Since then I have made it with bean,rice and chips. All my kids put different things on it. Jalapeno, black olives and guacamole. The list of toppings is endless.

Ingredients

  • 1 large can chili warmed
  • 1 can enchilada sauce
  • 1/2- box velveeta cheese
  • 1 small can rotel
  • 2 packages frozen burritos
  • 2 bags shredded lettuce
  • 2 medium tomatoes
  • 1 medium onion
  • 2 bags shredded cheese

How To Make chili enchilada burritos

  • Step 1
    Cube Velveeta and mix with rotel until melted. Warm chili in a sauce pan. Place thawed burritos in a baking pan with edges. Cut small slits in the top of each one.
  • Step 2
    Pour enchilada sauce evenly over burritos. Pour warmed chili evenly over burritos. Pour cheese sauce evenly over mixture.
  • Step 3
    Bake according to burrito package instructions. Top with lettuce, tomato, onion and shredded cheese.
