This is a great steak recipe. The result is not as spicy as the name may imply. The grilled salsa, however, can deliver a zesty kick. They papaya tenderizes the steak while the other components of the marinade add depth and flavor to the meat.

Ingredients

  • 1 cup papaya, roughly chopped
  • 1/2 cup olive oil
  • 1 - habanero pepper, stemmed
  • 3/4 cup grapefruit juice
  • - kosher salt and black pepper
  • 1 1/2 pounds flank steak
  • GRILLED TOMATO SALSA
  • 8 cloves garlic, peeled
  • 3 - jalapeno peppers
  • 4 - plum tomatoes, cored
  • 1 - white onion, halved
  • 1 cup cilantro leaves and stems, roughly chopped
  • 2 tablespoons lime juice

How To Make grapefruit and habanero skirt steak

  • Step 1
    Puree papaya and half the oil, plus habanero, grapefruit juice, slat and pepper in a blender into a smooth marinade.
  • Step 2
    Pour marinade into gallon-sized resealable plastic bag.
  • Step 3
    Add steak and seal bag. Marinade for 30-45 minutes but no longer.
  • Step 4
    Reserve remaining marinade.
  • Step 5
    Heat grill.
  • Step 6
    Grill garlic, jalapenos, tomatoes and onions on hottest part of the grill, turning as needed, until charred in spots and tender.
  • Step 7
    Allow vegetables to cool slightly.
  • Step 8
    Peel jalapenos and transfer to blender along with garlic, tomatoes, and onions.
  • Step 9
    Add remaining oil, plus cilantro, lime juice, salt and pepper. Pulse until chunky and transfer to nonreactive bowl.
